  Cherimoya recipes – fruit salads

Although cherimoya are at their most delicious when gobbled down fresh and untainted by any other flavours, here are some rather juicy fruit salad recipes.

Cherimoya tropical fruit salad
1 cup cherimoya chunks, seeds removed
1 cup fresh pineapple chunks
1 cup mango or papaya chunks
1 cup canned lychee, or firm ripe avocado chunks
1 washed and trimmed lettuce
Dressing: 1/2 cup low-fat fruit-flavoured yoghurt, like pineapple or lemon

Place fruit chunks in a bowl, then cover and refrigerate for 2–4 hours to blend flavours prior to serving.

To serve: Mix the dressing and the mixed fruit and serve in a lettuce lined bowl.
Serves 4–6.

Cherimoya fruit salad
1 cherimoya
2 apples
2 oranges
2 avocados

Peel, seed and cut cherimoya into chunks. Core apples and cut into eight. Peel and cut oranges into slices that are then cut in half to form half-circles. Remove the avocado stone and scoop out flesh, then cut into eight. On a lettuce bed, arrange alternate slices of apple, orange and avocado in a circle. Top with cherimoya chunks and serve with cherimoya salad dressing.

Cherimoya salad dressing
This fast and easy salad dressing is delicious on either fruit or green salads. In a blender, mix equal amounts of pureed cherimoya flesh and a salad dressing, such as ranch, french, or russian dressings, which make good combinations with cherimoya. Blend and chill at least one hour before serving.
Serves 6–8.
